 Today we are diving into the world of quick growing vegetables that can go from seed to salad in just 4 weeks or less.

Here are the 12 veggies 

1. BABY SPINACH

 The first on the list is baby spinach

Baby spinach leaves are ready to be harvested in as little as 15 to 20 days.

Plant the seeds in well-drained soil with a high content of organic matter. Water it regularly, and in no time your spinach will be ready to eat.

2. ARUGULA

Arugula is a peppery salad green that can be harvested in just 21 days.



Plant the seeds in rich well drained soil. Keep the soil evenly moist and harvest the leaves when they are about 2–3 inches long.

3. GARDEN CRESS

This spicy herb can be ready to eat in as little as 10–15days.


Sprinkle the seeds on damp soil and keep them well watered. You can start harvesting as soon as the plant have formed 2 true leaves.

4. RADISH 

This spicy, little root veggies are super easy to grow you can grow either the red american radish or white radish. 


Sow the seeds directly into the ground, about half an inch deep and one inch apart. Keep the soil moist but not waterlogged. radishes only take thirty days or just one month to maturity for harvest.

5. LETTUCE 


lettuce is super easy to grow as well. Although, it takes about 70– 80 days to maturity, but of course you can start harvesting lettuce leaves as soon as it develops three to four sets of leaves and that happens is 3 – 4 weeks. 

6. GREEN ONIONS 



Green onion are super easy to grow. you can buy green onions from a grocery store cut the bottom part of the green onion keeping at least half an inch of green onion at the bottom and then plant it. Or you can sprinkle green onion seeds on a rich soil and after just couple of weeks green onions will start to set up shoots which you can then harvest.

7. CHINESE CABBAGE (Bok choy)

This veggie can be harvested in as little as 30days. 



And it's easy to plant, just sow the seeds in well-drained soil and keep them well watered. You can start harvesting the leaves as soon as they're large enough to eat.

8. KALE



Kale is a super food that cam be harvested in just 25days. Plant the seed in rich, well-drained soil. Harvest the leaves when they're about 2–3 inches long.

9. BEETS

while the beets roots take a bit longer, the baby greens are ready in about 20days. beet leaves are super tender and very flavorful you can add them to your salad.

10. TURNIPS 


Turnips are another root veggies where the greens can be harvested in under a month. Sow the seeds directly into the ground in a sunny spot.keep the soil moist and you'll have a crop of tender greens ready to be picked in no time.

11. CHARD



Chard grows best in the cool weather of spring and winter but tolerates warm and hot weather as well. Plant the seed and watered it. It prefers rich, moisture-retentive, free-draining soil. Add organic matter, such as home-made garden compost. Chard can be harvested 12–15 days after planting. cut individual leaves as you need them and the plant will keep producing new leaves. 

12. MUSTARD GREEN

Mustard green is another quick growing veggies that can be harvested in about 21days. Sow the seeds directly into the ground in a sunny spot. Keep the soil moist and in no time you'll have a crop of spicy green ready to be picked.

Remember the key is to always buy quality seeds and to plant the seed in a rich, well-drained soil in order to get good results. Before planting, mix the garden soil with organic manure or compost in order to enrich the soil.
